The first 28 pages are devoted to a discussion of the advantages of rice and of rice culture and cultivation. This section prints many illustrations from drawings, mostly showing the cultivation and consumption of rice in China. It touts the nutritional and economic advantages of rice, its versatility, and benefits to infants and the sick, before launching into a history of rice culture, and description of the "primitive" Asian methods and advanced modern methods of the crop's cultivation. The rest of the book prints rice recipes, including many recipes for gumbos and jambalayas, as well as recipes rice with tomatoes Mexican style, Greek rice, rice tortillas, and Vienna rice custard.
