For example, the entry for lobster describes proper "fancy" grade lobster as such: "Should show the whole claws (3 or 4) carefully sandwiched at top; meat of claws should be white, retaining its bright red skin...tail meat should be white, retaining its bright red skin...The entire package should be practically free from blood..."
